Taco-filled Peppers Recipe

Ingredients:
1 lbs: Ground beef, extra lean
1 cup: Salsa,
1 package: Taco seasoning mix, 1 1/4
4 medium: Green pepper,
Oz,
1 medium: Tomato, chopped
1 can: Kidney beans, canned, 8 oz
1/2 cup: Shredded cheddar cheese,
Rinsed & draine,
1/2 cup: Sour cream,

Directions:
In a large skillet, brown the ground beef; drain. Stir in the taco
seasoning, kidney beans and salsa. bring to a boil; reduce heat and
simmer for 5 min. Cut peppers in half lengthwise; remove and discard
seeds and stems. Immerse peppers in boiling water for 3 min. drain.
Spoon about 1/2 cup meat mixture into each pepper half. Place in an
ungreased 13x9x2 in. baking dish. Cover and bake at 350 deg. for 15
to 20 mins. or until the peppers are crisp-tender and filling is
heated through. Top each with tomato, cheese and dollop of sour
cream. Yield: 4 servings.
