Curry-curry Couscous Recipe

Ingredients:
1 cup: Couscous,
1/2 cup: Cashews,
Salt,
2 tbsp: Cilantro, chopped
3: Plum tomatoes,
Fresh ground pepper,
1 tbsp: Indian-style curry paste,
Directions:
1. In a covered saucepan, bring 1 cup of water to a rolling boil over
high heat. Add the couscous and 1/2 tsp salt, stir well and remove
from the heat. Cover and let stand for at least 5 min.
2. Meanwhile, chop the tomatoes.
3. Fluff the cooked couscous with a fork. Add the tomatoes and curry
paste and toss. Add the cashews, cilantro, and salt and pepper to
taste; toss well and serve.
