Ingredients:
3: Eggs, separated
1/2 tsp: Vanilla,
3/4 cup: All-purpose flour,
1/4 tsp: Lemon extract,
1/4 tsp: Baking powder,
1/4 tsp: Cream of tartar,
1/8 tsp: Salt,
1/4 cup: Sugar,
3 tbsp: Water,

Directions:
Heat oven to 350 degrees. Grease and flour 2 baking sheets. Beat
1/3 cup sugar and the egg yolks in a small mixing bowl on medium
speed until very thick and lemon colored, about 3 minutes. Beat in
flour, baking powder and salt alternately with water, vanilla and
lemon extract on low speed. Beat egg whites and cream of tartar in
large mixing bowl until foamy, adding 1/4 cup sugar gradually;
continue beating until stiff and glossy. Fold egg yolk mixture into
egg whites, shape with teaspoon or pastry bag into fingers, 3x1
inch, on baking sheets. Bake until light brown, 10 to 12 minutes.
3 1/2 dozen lady fingers, less than 50 calories for 2.
