Oven Fried Sweet Potatoes^ Recipe

Ingredients:
4 medium: Sweet potatoes, peeled and
Vegetable cooking spray,
Sliced 1/4" thick,
1 tbsp: Finely chopped fresh,
1 tbsp: Olive oil,
Parsley,
1/4 tsp: Salt,
1 tsp: Grataed orange rind,
1/4 tsp: Pepper,
1 centiliter: Garlic, minced
Directions:
Combine potatoes, oil, salt and pepper; coating well. Bake on a large
sprayed cookie sheet at 400F for 30 minutes, until tender, turning
halfway through.
Combine remaining ingredients; stir well and sprinkle over potatoes.
Per 1/2 cup serving:
176 cal., 2.5g pro., 2.5g (13%) fat, 36.6g carb., 4.5g fiber, 0mg
chol., 0.9mg iron, 104mg sodium, 35mg calcium.
