Pine Nut-pesto Couscous Recipe

Ingredients:
1 cup: Couscous,
2 tbsp: Pine nuts,
1/2 tsp: Salt,
3 tbsp: Prepared pesto sauce,
3: Plum tomatoes,
Salt and pepper,
2: Green onion, s
Directions:
1. In a covered medium saucepan, bring 1 cup of water to a rolling
boil over high heat. Add the couscous and 1/2 tsp salt, stir well
and remove from the heat. Cover and let stand for at least 5 min.
2. Meanwhile, chop the tomatoes in to small pieces. Cut the green
onions crosswise into thin slices. Toast the pine nuts in a small
frying pan over medium heat, stirring often, until lightly browned,
about 3 min.
3. Fluff the couscous with a fork. Add the pesto and toss. Add the
tomatoes, green onions, and pine nuts. Season with salt and pepper to
taste and toss well.
