Apple-raisin Bread Pudding Recipe

Ingredients:
Bakers Joy No Stick Spray,
1/2 t: Nutmeg,
2: Whole eggs,
1/4 t: Salt,
2: Egg whites,
1 medium: Apple, pared, cored and
1 can: Evaporated milk, 12 oz
-chopped,
1/2 cup: Honey,
6 slice: Cinnamon-raisin bread, cubed
1 t: Vanilla extract,
1 t: Rum extract, opt
3/4 t: Cinnamon,
Directions:
Preheat oven to 350. Spray a 9" square baking dish with BAKERS JOY.
In large mixing bowl, whisk whole eggs and egg whites until foamy.
Whisk in evaporated milk, honey, vanilla, salt, nutmeg and rum
extract (optional).
Add chopped apple and bread cubes. Mix until bread is evenly
moistened. Turn mixture into prepared baking dish.
Bake at 350F. for 35-40 minutes until knife inserted in center comes
out clean.
Serve warm, topped with light cream or non-dairy whipped topping.
Sprinkle lightly with additional topping, if desired.
