Figs In Sauternes Recipe

Ingredients:
1 1/2 cup: Sauternes,
-minced,
2 tbsp: Sugar,
Juice of 1 lemon,
1 each: Vanilla bean, seeds removed
1 lbs: Fresh figs,
- and pod reserved.,
2 tbsp: Finely chopped fresh mint,
1: Zest of 1 lemon, finely
Directions:
In a medium saucepan, combine the Sauternes, sugar, vanilla bean pod
and seeds, zest, and juice. Simmer over medium heat for 8-10 minutes,
until tender. If the syrup becomes too thick, stir in 1 tb. of water.
Remove the vanilla pod and stir in the mint. Cool the figs in the
syrup and serve at room temperature.
Per serving: 155 calories, 40g carb., 1g protein, 0mg chol., .4g/1%
fat.
