Jennys Eggs Florentine Recipe

Ingredients:
4: Egg, poached;
1 tbsp: Mustard,
4: English Muffin, toasted;slice
1 tbsp: Lemon Juice,
4: Cheddar Cheese, slices
1/8 tsp: Cayenne,
3/4 cup: Mayonnaise,
1/2 cup: Spinach, cooked,squeezed dry
3/4 cup: Sour Cream,
Directions:
Blend last 6 ingredients in a blender or processor.
Gently heat resultant sauce in sauce pan. Place cheese slices on
toast, broil them till cheese melts.
To serve, place poached eggs on the muffins and top with sauce.
