Scampi Sausage Recipe

Ingredients:
4: Feet small hog casings,
1 tsp: Onion powder,
1 lbs: Whitefish fillets, cubed
1 tbsp: Very finely minced garlic,
2: Eggs, beaten
1/2 tsp: Allspice,
1 tsp: Vegetable oil,
1/2 lbs: Very small fish, cleaned
1 tsp: Butter, melted
1/4 lbs: Crabmeat, shredded
1 tsp: Lemon juice,
1/4 lbs: Bay scallops, quartered
Directions:
Prepare casings. Pulse fish in food processor just unti lbroken. Add
eggs, oil, butter, lemon juice, onion powder, garlic, and allspice.
Process until well blended. Add the shrimp, crab, and scallops.
process until just mixed. Do not over process. Stuff into casings,
twist off into 3-4" links.
