1 1/2 tbsp: Vital gluten, optional
1 tsp: Instant coffee granules,
1 1/2 tsp: Active dry yeast,
1 tsp: Salt,

2 LB
1 1/3 cup: Water,
1 1/4 tsp: Ginger, ground
2: Eggs,
1 1/4 tsp: Cinnamon,
2 1/2 tbsp: Vegetable oil,
1 cup: Rye flour,
1/4 cup: Molasses,
1 cup: Whole-wheat flour,
2 tbsp: Unsweetened cocoa,
2 cup: Bread flour,
1 1/2 tbsp: Brown sugar,
2 tbsp: Vital gluten, optional
1 1/2 tsp: Instant coffee granules,
2 tsp: Active dry yeast,
