Succotash Vinaigrette Recipe

Ingredients:
1 cup: Frozen corn kernels,
2 cup: Cooked dried lima beans,
1 t: Dijon mustard,
cup finely diced red onion,
1 each: tbls. balsamic or good,
cup diced red bell pepper,
-red wine vinegar,
Salt and pepper to taste,
1 T: Olive oil,

Directions:
Cook corn till tender about 5 to 6 minutes. Meanwhile, whisk together
the mustard and vinegar. Slowly add oil to the mixture while
whisking. Toss with lima beans, corn, onion and red pepper. Sprinkle
with salt and pepper. Cool before serving. From "Bean Power" by
