Broccoli-tofu Stir-fry Recipe

Ingredients:
INGREDIENTS
1 T: Sesame oil, PLUS 1 tsp
2 T: Rice vinegar,
1 small: Onion, sliced
1 T: Fresh ginger, grated
12 ounce: Firm tofu, drained,
2 cup: Broccoli flowerets,
-1/2: -inch cubes,
1 medium: Red bell pepper, thin strips
1/4 cup: Low-sodium soy sauce,
1 1/2 cup: Mushrooms, sliced
DIRECTIONS
Directions:
Heat oil in a 12-inch skillet and stir-fry onion until slightly
tender. Add tofu and stir-fry until lightly browned. Add the
remaining ingredients. Gently toss to coat all the ingredients with
the sauce. Cover and simmer over medium heat 5 minutes until the
vegetables are tender.
