Beet Fritters Recipe
Yield: 6 servingsRecipe by luhu.jp
Ingredients:
2 cup: Grated raw beets,
1 large: Egg, beaten
1/4 cup: Onion, diced
1/4 t: Ginger,
1/2 cup: Bread crumbs,
Salt and pepper to taste,
Directions:
Mix all ingredients. Spoon out pancake sized portions onto a hot,
oiled griddle. Cook until brown, turning once. Serve topped with
butter, sour cream, yogurt, or any combination of these. Serves 6-8.
NOTE: Turnips or rutabagas can be substituted for or mixed with
beets. Also a little hot pepper can be added if desired.
