Ingredients:
1 lbs: Boiling potatoes, peeled
2 tsp: Balsamic vinegar,
& grated or shredded,
2 tsp: Dried thyme,
1 can: Stewed tomatoes low-sodium,
1 large: Bay leaf,

1/4 tsp: Salt, or to taste, optional
-- oz can,
1/4 tsp: Black pepper,
3 cup: Cabbage, coarse ribs removed
1/2 lbs: Pork loin, trimmed of all fa
-- thinly sliced,
-- sliced,
1 large: Onion, finely chopped
1 can: Tomato sauce, low-sodium or
2: Garlic cloves, minced
-- regular, divided
1 tbsp: Light brown sugar, packed

Directions:

pot, combine potatoes, tomatoes, cabbage, onion, garlic, brown sugar,
vinegar, thyme, bay leaf, salt, if desired, and pepper. Stir to mix
well. Add pork slices on top of vegetables. Pour one-half of tomato
sauce over all. Reserve remaining tomato sauce in non-reactive
container in refrigerator.

Cover pork mixture, can cook on high setting 1 hour. Stir. Reduce
heat to low, and cook an additional 5 to 6 hours. Stir in remaining
tomato sauce and cook an additional 5 to 10 mins.
