Vindaloo Beef Curry Recipe

Ingredients:
10 ounce: Boneless beef round,
2 tsp: Light margarine,
1/2 cup: Onion, chopped
1: Garlic clove, minced
1 1/2 tsp: White vinegar,
1/4 tsp: Ground turmeric,
1/8 tsp: Ea: cumin, ground ginger
1/8 tsp: Ea: dry mustard, red pepper
1/8 tsp: Ea: black pepper, salt
3/4 cup: Water,
2 tbsp: Lemon juice,
1 cup: Cooked white rice, (hot)

Directions:
On rack in broiling pan, broil steak, turning once, until rare; cut into
1-inch cubes. In 1 qt saucepan, heat margarine until bubbly; add onion &
garlic and saute until onion is translucent. Add vinegar & seasonings and
stir to combine; add steak and cook, stirring frequently, for 3 minutes.
Stir in water, cover pan, and let simmer, stirring occasionally, until meat
is tender, about 1 hr. Stir in lemon juice and serve over rice.
