[<$2.50 Serving] Spinach Radiatore Recipe

Ingredients:
4 cup: Radiatore pasta [3/4lb],
3 tbsp: Olive oil,
1: Onion, chopped
2: Garlic cloves, minced
1 tsp: Dried thyme,
1 tsp: Dried oregano,
10 ounce: Fresh spinach, chopped
1/4 cup: Stock, Vegetable or Chicken
1 tsp: Lemon juice,
1/2 tsp: Salt,
1/2 tsp: Pepper,
1/2 cup: Light cottage cheese,
Directions:
In large pot of boiling salted water, cook pasta for 8-10 minutes or until
tender but firm. Drain well and return to pot.
Meanwhile, in large skillet, heat 2 tb of the oil over medium heat; cook
onion, garlic, thyme and oregano, stirring occasionally, for about 5
minutes or until onions are softened.
Add to pasta along with remaining oil, spinach, stock, lemon juice, salt
and pepper; toss to coat well. Cook over low heat for about 4 minutes or
until spinach is wilted. Stir in cottage cheese.
Per serving: about 460 calories, 17g protein, 12 g fat, 70 g carbohydrate,
high source fibre, excellent source iron.
