Baked Hush Puppies 2 Recipe

Ingredients:
1 cup: Yellow cornmeal,
1 cup: All-purpose flour,
1 tbsp: Baking powder,
1 tsp: Sugar,
1 tsp: Salt,
1 tsp: Pepper,
2 large: Eggs, lightly beaten
3/4 cup: Milk,
1/4 cup: Vegetable oil,
1/2 cup: Chopped onion,

Combine first 6 ingredients in a large bowl. Make a well in the center and
set aside. Combine the remaining ingredients. Add to dry mixture. Stir
until moistened. Coat miniature- muffin pans with cooking spray. Spoon 1
tablespoon batter into each cup. Bake at 425
F for 15 minutes. Remove from
pans and serve immediately.
Yield: 3 dozen
