Panzanella - Bread Salad Recipe

Ingredients:
1 Loaf: French Bread, Day Old
2 medium: Ripe Tomatoes, Diced
1: White Onions, peel, slice
1 medium: Cucumbers, peel, seed, slice
1/8 cup: Parsley, chopped
2 tbsp: Capers, drained
1/4 cup: Fresh Basil, chopped

DRESSING
2 tbsp: Olive Oil,
1 tbsp: Balsamic Vinegar,
2 tbsp: Lemon Juice,
1 Clove: Garlic, crushed
Salt And Pepper, to taste
1/8 cup: Parmesan Cheese, grated

Directions:
Combine all dressing ingredients in a large bowl. Whisk until smooth. Add
remaining ingredients and toss well. Allow to stand at room temperature for
about 30 minutes. Toss again and serve.
