Crockpot Bean Soup ( Vegan ) Recipe

Ingredients:
1 lb: asst dry beans, any kind,
1/2 cup: pearl barley,
28 oz: chopped tomatoes, or,
1: equivalent of fresh,
3: carrots, chopped,
3 stalks: celery, chopped,
1 large: onion, diced,
2: bay leaves,
1/2 teaspoon: thyme,
1/2 teaspoon: marjoram,
1: salt and pepper to taste,
1: veggie stock or water,
1: to fill the pot,
OPTIONS
1: fennel bulb, chopped,
1: peas, lentils, limas etc,
1: corn,
1: pasta,
1: anything you can think of,
Directions:
The dry beans are NOT cooked first - they cook just fine over the
course of the day, but if you are sensitive to the oligosaccarides in
them (the stuff that makes you noisy when you eat beans), be adivsed!
Throw the list in the crock in the morning, and youve got dinner
when you get home.
