Ingredients:
2 medium: onions, chopped
1/2 cup: celery & leaves, finely chop
1 teaspoon: salt,
1/8 teaspoon: pepper,
1/2 teaspoon: dried thyme, crushed
2 tablespoon: oil or shortening,
1 cup: fine dry bread crumbs,
1: 3 lb flank steak,
1 cup: tomato sauce, beef stock, or,
1: red wine,
Directions:
Saute onions and celery with seasoning in hot fat for 3 minutes. Add bread
crumbs. Mix well. Pound flank steak with mallet to flatten. Spread
stuffing on meat. Roll meat lengthwise and tie securely in 4 places. Place
in cooker. Add tomato sauce, beef stock, or wine. Cover and cook on LOW
for 8 to 10 hours.
