Kathryn Palmers Maple Bars Recipe

Ingredients:
3/4 cup: Sugar,
1/2 cup: Vegetable shortening,
1 cup: Maple syrup,
1 tsp: Vanilla extract,
2: Eggs,
2 cup: Regular rolled oats,
1 cup: All purpose flour,
1/4 cup: Flaked sweetened coconut,
1 tsp: Baking powder,
1/2 tsp: Salt,
Vegetable cooking spray,

Directions:
Cream sugar and shortening at medium speed of mixer
until light and fluffy (about 5 minutes). Add syrup,
vanilla, and eggs; beat until well blended. Combine
oats and next 4 ingredients; stir well. Add to creamed
mixture, stirring just until dry ingredients are
moistened. Pour batter into a 13x9 inch baking pan
coated with cooking spray. Bake at 350 deg for 40
minutes or until a wooden pick inserted in center
comes out clean. Yield: 2 dozen
