Artichoke Chowder Recipe

Ingredients:
1 tbsp: Olive Oil,
1/2 cup: Onions, Chopped
1 cup: Mushrooms, Sliced
8 ounce: Artichokes, Canned, *
2 cup: Chicken Broth,
1/2 cup: Green Peas,
4 tbsp: Unbleached Flour,
2 cup: Evaporated Skimmed Milk,
Salt & Pepper, To Taste
Directions:
* Drain and chop the canned artichokes.

In a large saucepan heat the oil and saute the onions. Add the
mushrooms, artichokes, and broth. Cook about 5 minutes or until
tender. Add the peas. Blend the flour into the evaporated milk and
add to the mixture in the pan. Cook for 5 to 7 minutes or until
slightly thickened. Season to taste with salt and pepper.
