Mexican-style Meat Loaf Recipe

Ingredients:
No-stick corn oil cooking,
Spray,
1 lbs: Extra-lean ground turkey,
3/4 lbs: Ground beef sirloin,
2: Green onions, chopped
3/4 tsp: Salt,
3/4 tsp: Ground cumin,
1/2 tsp: Dried marjoram or oregano,
1/4 tsp: Freshly ground black pepper,
1 cup: Fresh bread crumbs,
7 ounce: Jar sweet roasted red pepper,
Drained and chopped,
1: Egg white,
1/2 cup: Canned black beans, drained
Directions:
Heat oven to 350 degrees. Lightly coat an 8x5x3 inch loaf baking pan
with no-stick corn oil cooking spray; set aside. In a large bowl,
combine the extra-lean ground turkey, ground sirloin, green onions,
salt, cumin, marjoram or oregano, black pepper, bread crumbs, red
pepper, egg white and black beans. Mix with your hands or a sturdy
spatula to thoroughly combine all ingredients. Pack into prepared
pan and bake 45 minutes. Remove from heat and allow to rest 5 minutes
before slicing. Cut into 1 inch slices.
