Boofers Recipe

Yield: 12 Servings

Ingredients:
3 cup: Mashed potatoes,
1 tbsp: Oil,
1 medium: Onion, chopped
1/2 cup: Tofu, crumbled
1/4 cup: Parsley, minced
1/2 tsp: Salt,
1/4 tsp: Black pepper,
2 tbsp: Oil,

Directions:
Saute the 1 T. oil and 1 med chopped onion.

Mix the tofu, parsley, salt and pepper into the potatoes.

Shape into 12 patties 1/2" thick and brown about 4 minutes each side
in 2 T oil.

Per patty: Cal 83; prot 3 g; fat 4 g; carb, 8 g
