Moscardini De Pesach Recipe

Ingredients:
1 1/2 cup: Coarsely ground, roasted almonds
1 cup: Sugar,
pn Salt,
1/4 cup: Unsweetened cocoa,
Matzo meal,
1: Grated rind of orange,
1/2 tsp: Almond extract,
1: Egg, lightly beaten
1: Egg yolk, lightly beaten
Directions:
Preheat oven to 350F. Combine almonds, sugar, salt, cocoa, 1 cup
matzo meal, orange rind, almonds extract, egg and egg yolk in a small
bowl.
Drop dough by rounded teaspoonfuls on oiled baking sheet dusted with
matzo meal. Shape each cookie into a oval, flatten with bakc of fork.
Bake for 10 minutes. Cool on rack.
Makes 2-1/2 dozen 3" cookies.
