Pineapple Spice Loaf Recipe

Ingredients:
2 cup: Flour, sifted
2 tsp: Baking powder,
1 tsp: Salt,
1/2 tsp: Baking soda,
1/2 tsp: Ground ginger,
1/2 tsp: Ground nutmeg,
1/3 cup: Brown sugar,
1/3 cup: Vegetable oil,
1 tsp: Vanilla,
2: Eggs,
1 can: Crushed pineapple in juice,
8 Ounce: ,

Directions:
Into large bowl, sift together first 6 ingredients. Stir in brown
sugar, set aside. In small bowl, mix oil, vanilla and eggs until well
blended. Stir in undrained pineapple. Add to dry ingredients; stir
just until moistened. Poour batter into greased 9x5x3 loaf pan. Bake
in 350 degree oven 55 to 60 minutes, or until loaf is golden brown
and a toothpick inserted in center comes out clean. Cool in pan 10
minutes. Remove; cool on rack. Makes 1 loaf.
