Potato Sambal Recipe

Ingredients:
8 ounce: Potato,
4 each: Scallion, finely minced
2 each: Chile serrano, finely choppe
1/2 tsp: Salt,
1 tbsp: Lemon juice,
2 tbsp: Coconut milk,
1 tbsp: Cilantro, chopped
Directions:

Time: 0:25 Boil potatoes in their skins; peel and coarsely mash them.
Combine all ingredients, except the coriander, in a shallow serving
bowl. Taste the mixture and add more salt or lemon juice if
necessary. Sprinkle coriander over the top. Chill in the
refrigerator until ready to use.
