Potatoes With Salmoriglio Sauce Recipe

Ingredients:
2 lbs: Small red new potatoes, scrubbed
3 tbsp: Olive oil,
2 tbsp: Lemon juice,
1 large: Clove garlic, peeled and forced through a press
1/2 tsp: Salt,
1/4 tsp: Freshly ground black pepper to taste,
2 tbsp: Minced fresh oregano or 1 ts dried oregano crushed,
Directions:
Cut the potatoes in halves and place in a steamer basket. Steam in a
covered pan with water at a low boil. Steam about 20 minutes, until
the potatoes are tender. Drain and transfer to a bowl.
While the potatoes are cooking combine the olive oil, lemon juice,
garlic, salt, pepper, and oregano in a small jar.
Pour the sauce over the potatoes and stir well to coat. Let sit 5
minutes and serve.
Menu suggestion: Serve this side-dish with baked chicken or a simply
