Dutch Green Split-pea Soup Recipe

Ingredients:
2 ounce: Canadian-style bacon,
2 cup: Water, divided
1 1/2 ounce: Green split peas, sorted and rinsed
6 ounce: Pared potatoes, diced
1/2 cup: Chopped leeks,
1/2 cup: Celeriac, pared and diced
2 tbsp: Celery leaves,
4 ounce: "precooked" kielbasa, 1/4-inch thick rounds
1/8 tsp: Summer savory leaves,
Pepper to taste,
Directions:
Cut bacon into small pieces and set aside. Bring 1 cup water to a
boil in 2-quart saucepan; add dry peas and boil for 3 minutes. Remove
from heat, cover and let stand for 1 hour. Add remaining water and
the bacon to saucepan and bring to a boil. Reduce heat, partially
cover, and let simmer for 1 hour. Add potatoes, leeks, celeriac and
celery leaves; cook until vegetables are tender, about 30 minutes.
Add kielbasa, savory and pepper; cook until sausage is heated
through. Serve hot.
Makes 2 servings.
