Fasolakia Yiyantes Sto Fourno (oven-baked G Recipe

Ingredients:
2 lbs: Dried giant white beans,
2 cup: Oil,
1 each: Head of garlic,
3 each: Onions, med., chopped
1 tbsp: Celery, chopped
1/2 cup: Parsley, minced
Salt & pepper to taste,
1 cup: Hot water,
1 3/4 lbs: Tomatoes, peeled,strained OR
1 tbsp: Tomato paste + 1 1/2 c water,
Addtl water as needed,

Directions:
Wash the beans, place in water, and soak them overnight. Drain
them, then place in a pot of fresh cold salted water; cook for 45
min.; drain. Meanwhile, place oil, garlic, and onions in a baking pan
and bake in preheated 350 F. oven until golden. Add beans, celery,
parsley, salt & pepper, and hot water. Bake 30 min. longer. Remove
from oven, stir the beans, pour in tomatoes (or diluted tomato
paste). Return to oven and bake until only the oil remains.
