Spanish Vegetable Stew W/ Squash Recipe

Ingredients:
3 large: Onions, chopped
4 large: Green bell peppers, chopped
4 large: Tomatoes, peeled & chopped
1 lbs: Yellow squash, chopped
2 medium: Potatoes, cubed
5 tbsp: Olive oil,
2 each: Garlic cloves, minced
2 tbsp: Chopped parsley,
1 1/2 tsp: Salt,
Directions:
Heat oil and saute onions for a few minutes. Add remaining
ingredients and a little water. Cover & simmer for 40 minutes,
stirring occasionally.
