Herbed Tenderloin Recipe

Ingredients:
4 lbs: Beef tenderloin roast, well-trimmed
2 tbsp: Grated Parmesan cheese,
SEASONING
1 tsp: Dried Italian seasoning,
1/2 tsp: Cracked black pepper,
Directions:
Cooking & preparation time: 1 hour 15 min
1. Heat oven to 425 F. Combine seasoning ingredients; press evenly
onto roast. Place on rack in shallow roasting pan. Insert meat
thermometer so bulb is centered in thickest part. Do not add water or
cover. Roast approx. 45 to 50 minutes for medium-rare to medium
doneness.
2. Remove roast when meat thermometer registers 140 F for
medium-rare, 155 F for medium; sprinkle cheese over top. Let stand 15
minutes. (Temperature will continue to rise to 145 F for medium-rare,
160 F for medium)
3. Carve roast into slices; season with salt, as desired.
