Chocolate-almond Parsons Hats Recipe

Ingredients:

1 1/2 cup: Margarine or butter,
2 1/2 cup: Flour,
1 1/2 cup: Sugar,
2/3 cup: Unsweetened cocoa powder,
2: Eggs,
1 t: Baking powder,
1 8-ounce can: almond paste,
1/4 cup: Sugar,
1: Egg,
1 T: Flour,

Directions:
Beat margarine or butter in large mixing bowl till
softened. Add about half of the flour. Add sugar,
cocoa powder, eggs, baking powder, and 1/2 tsp. salt.
Beat till thoroughly combined, scraping sides of bowl
occasionally. Beat or stir in remaining flour. Divide
dough in half. Cover and chill about 3 hours or till
easy to handle.

Roll each half of dough to 1/4 inch thickness. Using a
2 1/4 to 2 1/2 inch cookie cutter, cut dough into
rounds. Spoon 1 tsp. Almond filling onto the center of
each round.

To shape, lift three edges of dough round. Fold edges
toward, but not over, filling. Then pinch the three
outer points together. Place cookies 2 inches apart on
an ungreased cookie sheet. Bake in a 350 degree oven
for 10-12 minutes or till edges are firm. Remove
cookies and cool on a wire rack. Makes 48.

Almond Filling: In a small mixing bowl beat almond
paste, sugar, 1 egg, and the 1 TBS. flour till smooth.
Makes about 1 cup.
