Light Impossible Breakfast Quiche Recipe

Ingredients:
1 cup: Low-fat cheddar cheese, grated, or half LF and half FF
1 cup: Ham, extra-lean, cubed, or light sausage, cooked and crumbled
1/2 cup: Green onion, thinly sliced
2: Eggs,
1 cup: Eggbeaters,
1 cup: Bisquick, Light
2 tbsp: Butter, melted, (or omit and increase Butter Buds by same quantity
3/4 cup: Liquid butter buds,
3 cup: Nonfat milk,
Salt,
Pepper,
Directions:
Preheat oven to 350 F.
Spray a 9 x 13" pan with pan coating and scatter the meat, cheese and
onions evenly over the bottom. Sprinkle with salt and pepper to taste (omit
salt if using ham).
Put remaining ingredients in blender and blend 15 seconds. Pour over
ingredients in pan. Bake for 50 to 60 minutes, or until a knife inserted
in the center comes out clean. Let sit 5 minutes before cutting into
squares.
While there are _some_ fat-bearing ingredients in this, the flavor is much
superior to using ALL substitutes, and the fat is drastically reduced from
the original recipe.
For brunch, serve with fruit salad and whole-wheat toast.
