Directions:
1. Cook your choice of vegetables with cubed potatoes or precooked white
beans and defatted broth until soft. Puree. The pureed vegetables eliminate
the need for cream.
2. Process low-fat or nonfat cottage cheese until smooth. Use in place of
cream. Add just before serving to avoid curdling.
3. Substitute buttermilk for cream in broccoli, turnip or carrot soups.
Add just before serving.
4. Replace the cream with evaporated skim milk.
