3 lbs: PORK BUTT,
3/4 lbs: PORK FAT BACK,
1 tbsp: GARLIC, MINCED
4 tsp: KOSHER SALT,
2 tbsp: FENNEL SEED,
1 tsp: CAYENNE PEPPER,
1 tbsp: RED PEPPER FLAKES,
2 tsp: BLK.PEPPER,
2 tbsp: SAMBUCA, OR PERNOD
1/4 cup: WATER,
md HOG CASINGS,

Directions:
grind the meat,fat,spices.Mix well to blend the spices,add the water to
help w/blending. pipe into casings.
