Cheesy Broccoli Soup Recipe

Ingredients:
2 tbsp: Oil,
3/4 cup: Milk,
3/4 lbs: Broccoli, coarsely chopped
1/8 tsp: Nutmeg,
1: Onion, chopped
1 cup: Cheddar cheese, extra sharp
3 tbsp: Flour,
Black pepper,
2 cup: Chicken broth,
Directions:
Cook onion and broccoli in oil, covered, over low heat for 10 minutes,
until broccoli is tender. Mix in flour, then chicken broth, stirring
constantly; bring to a boil. Reduce heat and add milk and nutmeg;
simmer on low, covered for 4 minutes. Turn off heat. Puree soup in
blender or food processor; return to pot. Stir in cheese over very
low heat, until melted. Season to taste. 276 calories and 18 grams
