Oatmeal-raisin Muffins Recipe

Ingredients:
MORNING FOOD
1 cup: Rolled oats,
1/2 tsp: Cinnamon,
1 cup: Buttermilk,
2: Eggs, beaten lightly
3/4 cup: White flour,
1/3 cup: Light brown sugar,
1/2 tsp: Baking powder,
6 tbsp: Butter, melted
1/4 tsp: Salt,
1/3 cup: Raisins,
3/4 tsp: Baking soda,

Combine oats and buttermilk. Let stand 30 mins. Sift flour, powder,
salt, soda, and cinnamon. Stir eggs into buttermilk mixture, then add
sugar, butter and flour mixture. Stir until just combined. Batter
will be lumpy. Fold in the raisins. Spoon into muffin cups, filling
2/3 full. Bake 400 F, 15-20 mins.
