Carmel Apple Cookies Recipe

Ingredients:
1/2 cup: Shortening,
1 1/3 cup: Brown sugar, firmly packed
1: Egg,
2 1/4 cup: Sifted flour,
1 tsp: Baking soda,
1/2 tsp: Salt,
1 tsp: Cinnamon,
1 tsp: Ground cloves,
1/2 tsp: Nutmeg,
2 cup: Grated peeled apples,
2 cup: Light raisins,
1/2 cup: Apple juice,
2 cup: Chopped walnuts,
Carmel icing,
Directions:
Cream shortening, sugar and egg. Sift dry ingredients together and
add to creamed mixture. Stir in remaining ingredients, except icing.
Drop 3 inches apart on a greased cookie sheet. Bake at 350 degrees
for about 12 minutes. Cool, spread with icing.
Carmel Icing 1/4 c butter 1/4 c brown sugar, packed 1 1/2 c powdered
sugar 1/4 ts salt
2 1/2 tb light cream
Mix butter and brown sugar in a saucepan and cook until sugar is
dissolved. Add sifted powdered sugar, salt and cream. Beat until
smooth. If too thick, add a little more cream. Randy Rigg
