Down East Fish Hash Recipe

Ingredients:
1 small: Onion, diced
2 tbsp: Oil,
2 cup: Diced cooked potatoes,
2 cup: Flaked cooked fish,
2: Hard boiled eggs, diced
1 tsp: Salt,
pn Pepper,
1 tsp: Worchestershire sauce,
2/3 cup: Evaporated milk,
Directions:
Simmer onion in oil for about 5 minutes. Add potatoes, fish and eggs.
Sprinkle with salt and pepper. Add Worcestershire sauce to milk and
stir into the fish mixture. Cover and cook over moderate heat until
hash is crusty and brown on the bottom. Turn the hash like an omelet
and brown on the other side. Serve piping hot. Randy Rigg
