Glazed Veggies On Sticks Recipe

Ingredients:
4 tbsp: Olive oil,
2 tbsp: Lemon juice,
2 tbsp: Basil, fresh, chopped
2 tbsp: Garlic, finely chopped
Salt & pepper, to taste
1: Red pepper,
1: Red onion,
1: Yellow zucchini,
8: Mushrooms,
Directions:
To make glaze, combine oil, lemon juice, basil, garlic, salt and
pepper and refrigerate for an hour.
Cut red pepper, onion and zucchini into eights. Spear vegetables,
including mushrooms, with eight 6-inch wooden skewers. (Soak skewers
in water for 1/2 hour before use to prevent burning.)
Grill on barbecue over medium heat and baste with glaze until
vegetables are cooked, approximately 5 minutes.
TIP: To intensify flavour, marinate vegetable pieces in glaze for 1
hour.
