Pumpkin Pecan Muffins Recipe

Ingredients:
4: Eggs,
2 cup: Sugar,
3/4 cup: Miracle Whip,
16 ounce: Pumpkin,
1 cup: Pecans, chopped
2 3/4 cup: Flour,
2 tsp: Baking soda,
1/2 tsp: Salt,
1/2 tsp: Cinnamon,
Directions:
Heat oven to 400. Beat eggs and sugar with electric mixer on medium
speed until well blended. Stir in miracle whip. Add pumpkin and
pecans; mix well. Mix flour, baking soda, salt and cinnamon. Stir
flour mixture into pumpkin mixture. Beat 2 minutes with electric
mixer on medium speed. Spoon batter into greased muffin cups, filling
cups full. Sprinkle batter with additional chopped pecans, if
desired. Bake 15 to 20 minutes. Cool 5 minutes; remove from pans.
