Quick Cassoulet^ Recipe

Ingredients:

2: Boneless, skinless chicken
Breast halves, cut in 1"
Pieces,
1 cup: Chopped carrots,
1/2 cup: Chopped onion,
1/2 cup: Chopped celery,
1/2 tsp: Dried thyme leaves,
1/4 tsp: Pepper,
2 centiliter: Garlic, minced
1 can: , (8oz) tomato sauce
2 can: , (15.5oz) great Northern
Beans, drained
4 ounce: Cooked turkey ham, cut in
3/4: " pieces,
2 tbsp: Chopped fresh parsley,

Directions:
In large nonstick skillet over medium-high heat, combine chicken,
carrots, onion and celery. cook and stir 3-5 minutes or until chicken
is no longer pink. Add thyme, pepper, garlic and tomato sauce. Reduce
heat, cover and simmer 5-7 minutes or until vegetables are tender.
Stir in beans and turkey ham; cook until thoroughly heated. Just
before serving, sprinkle with parsley. 5 (1 cup) servings.

Per serving: 220 calories, 24 g protein, 31 g carbohydrate, 9 g
fiber, 3 g fat (12%), 46 mg cholesterol, 860 mg sodium, 590 mg
potassium, 1 1/2 starch, 2 lean meat and 1 vegatable exchange.
