Luscious Low-fat Tiramisu Recipe

Ingredients:
1 1/2 cup: Ricotta Cheese,
4 ounce: Light Cream Cheese (125 g), softened
1/3 cup: Granulated Sugar,
2 tbsp: Orange Juice,
1/4 cup: Boiling Water,
1 tsp: Expresso Powder,
3 tsp: Almond Liqueur or Orange Juice,
12 each: Ladyfingers,
1 ounce: Square Semi-Sweet Chocolate,

DIRECTIONS:
1. In food processor, process ricotta for about 45 seconds or until
smooth. Add cream cheese, sugar and orange juice. Continu to process
at least 1 minute until mixture is very smooth and light.
2. In small bowl or measurng cup, combine boiling water, expresso
powder and liqueur. Trim the ladyfingers so that 6 cookies will lay
flat in the bottom of an 8 X 4-inch loaf pan. Trim remaining cookies
the same way. Liberally brush cookies on all sides with coffee
mixture. Return first 6 cookies to pan. Spread half ricotta mixture
evenly over them. Top with remaining ladyfingers then remaining
ricotta.
3. With vegetable peeler, shave chocolate over top layer of ricotta
mixture. Cover and refrigerate at least 1 1/2 hours or up to 2 days.
Dust with icing sugar before serving.
Serves 6 to 8.
