Mennonite Beet Pickle Recipe

Yield: 2 quarts

Ingredients:
2 quart: Diced or sliced beets,
1/2 cup: Grated horseradish,
-cooked,
2 cup: Vinegar,
3 small: Onions,
3 cup: Sugar,
3 each: Green peppers,
3 tsp: Salt,

Directions:
Dissolve sugar and salt in hot vinegar
Add horse-radish and bring to a boil.
Add beets and chopped onion and simmer 20 minutes.
Place in 2 sterilized quart jars or keep in refrigerator.
