Golden Peanut Brittle Recipe

Ingredients:
3 cup: Raw peanuts, shelled
1 cup: Light corn syrup,
1 1/2 tsp: Baking soda,
1/2 cup: , Water
1/2 tsp: Salt,
1/4 cup: Butter or margarine,
2 cup: Sugar,
Directions:
Spread peanuts evenly in a 15" x 10" x 1" jellyroll pan; bake at
350 degrees for 15 minutes. Set aside.
Combine soda and salt; set aside. Combine sugar, syrup, and water
in a Dutch oven; cook over low heat, stirring occasionally, until
mixture reaches soft crack stage (275 degrees). Add peanuts and
cook, stirring constantly, until mixture reaches hard crack stage
(300 degrees F). Remove from heat; stir in butter and soda mixture.
Working rapidly, spread mixture thinly onto 2 buttered 15" x 10" x
1" jellyroll pans. Let cool; break into pieces. Yield: about 2-1/2
pounds.
