Jacques Pepin Vegetable Gratin+ Recipe

Ingredients:
1 1/2 cup: Day old hearty bread cubes,
2 tbsp: Parsley, minced
1 1/2 cup: Cherry tomatoes, (mixed
3 tbsp: Parmesan, grated
-colors if you can get them),
OPTIONAL
Zucchini,
Eggplant,
Sweet bell pepper,
Leeks,
Scallions,
Or what have you?,
IN ADDITION
Fresh herb of your choice,
3 tbsp: E.V. olive oil,
Freshly cracked black pepper,
Directions:
Toss all in a bowl and put into a gratin dish of accomodating size.
Bake in a 350 degree oven till cooked and somewhat browned on top.
We have had this dish and it is lovely. We must try it again, soon.
