Sweet Corn And Anaheim Chile Pepper Relish Recipe

Ingredients:
1 1/2 cup: Sweet corn,
1 tsp: Tabasco sauce,
1/2 cup: Red Bermuda onion, diced
1 1/2 tsp: Cumin,
-small,
1 1/2 tsp: Sugar,
1/2 cup: White onions, diced small
2 Fluid ounces: White vinegar,
1 cup: Cucumber, peeled, seeded --
2 Fluid ounces: Olive oil --,
-diced small,
-100 %: Extra Virgin,
1/3 cup: Red bell pepper, diced
3: Green Anaheim chili peppers,
-small,
-sliced thin, few seeds
1/3 cup: Bell pepper, diced small
3: Red Anaheim chili peppers --,
8 tbsp: Fresh lime juice,
-sliced thin, few seeds
1 pinch: Salt, to taste
1 Head: Frisee lettuce,
Directions:
Combine all the ingredients and allow them to set at room temperature
for one hour before using.
CHEFS NOTE: Refrigerate overnight and the flavor builds.
Spoon the relish onto the well-washed leaves of Frisee lettuce. Serve
as part of "Grilled Grouper Savoy Grill" (see recipe of that name in
this cookbook).
