Blintzes (cheese) Recipe

Ingredients:
Serves 4,
1/4 cup: Granulated sugar,
1 cup: Flour,
Few drops vanilla extract,
pn Salt,
Oil or shortening, then
2 each: Eggs,
-butter,
2/3 cup: Milk,
Strawberry jam, or red
FILLING,
-currant jelly,
1 cup: Cottage cheese,
Directions:
Sift flour and salt, beat to a thick creamy batter with the eggs and
milk. Brush a thick skillet with oil or shortening. Heat fry pan,
and fry pancakes until golden brown on both sides. Keep hot or store
for later use. Fill with the cottage cheese blended withthe sugar
and vanilla extract. Place some fillin gin the center of each
pancake and roll up. Heat in hot butter for a few minutes. Serve
topped with hot or cold jam, or with cream. Origin: Marguerite
