Buds Sunday Salmon Croquettes Recipe

Ingredients:
THE CROQUETTES
1 cup: Onions, finely chopped
2: Eggs, large
1/2 cup: Green Peppers finely chopped,
1 tbsp: Cajun Seasoning, (Luzianne
1 cup: Cracker crumbs,
-TM all-purpose w/lemon,
1 can: Salmon, 14.75 oz
THE SAUCE
1/2 cup: Flour,
1 can: Peas, 16 oz.
1 1/2 cup: Milk,
Pepper to taste,
Directions:
The croquettes------ Finely chop onions and green peppers. Microwave
them until tender (approx 3 min.) In medium bowl, beat eggs, add
drained salmon, cracker crumbs, and remainder of ingredients. Mix
thoroughly. Separate into balls and refrigerate 1 hr. Fry in oil
until brown, turning as neccessary. Serve with peas in white sauce.
The sauce In med. sauce pan, mix flour and milk and heat slowly until
thickened and sauce forms -- stirring constantly to avoid lumps. Add
peas. Serve over croquettes
Concocted by Bud Cloyd on a Sunday afternoon when the larder was
looking low.
